Spike Mendelsohn is executive chef and owner of Good Stuff Eatery in Washington, D.C. Spike was also a contestant on season five of Bravo’s Top Chef. He shares a favorite memory associated with Vidalia onions.

Spike Mendelsohn Vidalia Memory:

When my sister, Micheline, introduced me to her boyfriend (now husband), Cliff Luhn, the first thing we connected on was that he was from Vidalia, Georgia – and as a Chef I’d been using Vidalia onions my whole life. Their natural sweet flavor adds a depth to the taste of most dishes that you can’t get with any other onion, they are fantastic to cook with.

I remember Cliff being so proud to tell me all about the Vidalia packing houses and their entire process of getting the onions from the ground to the grocery store.

When my family and I were thinking of what type of restaurant to open, we kept coming back to our favorite meals. Burgers, shakes, fries and onion rings! What’s better! I have fond memories of being in my grandfather’s backyard, him grilling juicy thick burgers and wrapping them up in wax paper (that was his specialty) to serve to the family. Of course, I could only look at the “frying station” from afar filled with french fries and onion rings, I was too young and rambunksious to be let near a deep fryer.

Over 20 years later, we’re sitting at the empty space of Good Stuff Eatery, creating recipes and Cliff, insisted on Vidalia onions for the petals. We couldn’t have made the taste that customers love so much, so great without our Vidalia Onions!
