Donkey’s Savory Onion Parfait
These Shreked-out tasty creations have one thing in common, the sweet flavor of Vidalia® Onions. Best of all, these recipes are not only delicious but they’re good for you too! A layered Dip of Caramelized Vidalia® Onions and Creamy seasoned dip.
- 2T. olive oil
- 4 Sweet Vidalia® onions (2 pounds total), finely chopped
- Coarse salt and ground pepper
- 2 C. sour cream
- 4 ounces cream cheese, room temperature
- 3 t. white-wine vinegar
- ½ C. finely chopped chives
- 2 t. minced garlic
- 1 t. dried thyme
- 2 t. Worcestershire sauce
- Potato chips, for serving
- Carrot and celery Sticks for serving
In a large skillet, heat oil over medium. Add onions; season with salt and pepper. Cook, stirring frequently, until golden brown, 12 to 15 minutes. Let cool to room temperature. In a medium bowl, combine sour cream, cream cheese, vinegar, chives, garlic, thyme and Worcestershire sauce; season with salt and pepper. In a glass serving dish, pour in ½ of the dip mixture and then top that with ½ of the caramelized Sweet Vidalia Onions. Make sure the caramelized onions are pushed to the edges of the dish and as level as possible. Pour on the remaining dip and top with the final layer of onions. Chill dip until slightly thickened, about 1 hour; or cover and refrigerate up to 2 days. This is a beautiful party presentation arrange your vegetables around the dish and chips in a separate bowl or basket on the side and as your guests dip in, the layers will be reminded that everyone loves parfait!
