Shrek-O-licious Summertime Succotash

These Shreked-out tasty creations have one thing in common, the sweet flavor of Vidalia® Onions. Best of all, these recipes are not only delicious but they’re good for you too! Grilled Vidalia® Onions, Corn, Peppers & Fava Beans in a Vidalia® Onion Vinaigrette


  • 1 large Sweet Vidalia® Onion peeled and sliced into 4 disks
  • 4 ears white corn
  • 1 red bells cut in half and seeded
  • 1 yellow bell cut in half and seeded
  • 1 C. blanched fava beans or peas
  • 3T. extra virgin olive oil
  • 2T. rice vinegar
  • 1T. lime juice
  • 1T. cilantro chopped
  • 4 basil leaves hand torn into small bits
  • 1t. minced garlic
  • Salt and Pepper to Taste


In medium bowl toss 3 of the Vidalia onion disks, corn and bell peppers in 1 T. olive oil, salt and pepper and place on a hot grill. Grill for 4 minutes on each side allowing for a small amount of charring to occur. Remove from the grill and set aside. In the food processor place the remaining disk of Vidalia onion, rice vinegar and lime juice. Process till finely chopped. Transfer mixture to another bowl and whisk in remaining olive oil, herbs and garlic. Once grilled vegetables are cooled enough to handle, cut corn from the cob, dice the bell peppers and dice the Sweet Vidalia onion and add to your vinaigrette. Mix well and add your fava beans adjust seasoning with salt and pepper to taste and refrigerate till ready to serve. This makes a great side dish to bring to a potluck and a wonderful side to grilled fish and chicken.
