Sweet Vidalia Primavera Pizza

Ingredients for 6-8 Servings

  1. Ingredients:

    • 1 lb Pizza Dough

    • 1 ¼ cups Grated Smoked Mozzarella

    • 1 ¼ cups Drained Diced Canned Tomatoes (with Italian seasonings)

    • 1 ¼ cups Thin Asparagus Spears

    • 4 Slices (about ¼-inch thick) Vidalia® Onion

    • 3 oz Soft Fresh Goat Cheese

    • Drizzle of Olive Oil


    Directions:

    1. Preheat the oven to 400°F. Oil a large baking sheet or 12-inch ovenproof skillet.

    2. Roll out the pizza dough into a 12-inch round, leaving thicker edges to create a crust. Place the dough onto the prepared baking sheet or skillet.

    3. Evenly top the dough with smoked mozzarella, leaving about a 1-inch border around the edge. Scatter the diced tomatoes over the cheese.

    4. Trim and discard the woody ends from the asparagus, then cut the spears diagonally into 1 ½- to 2-inch pieces. In a small bowl, combine the asparagus pieces and Vidalia onion slices (separated into rings). Lightly drizzle with olive oil and toss.

    5. Spread the asparagus and onions on top of the pizza. Pinch or cut small pieces of goat cheese and scatter them over the vegetables.

    6. Sprinkle with oregano, drizzle lightly with olive oil, and bake on the lowest rack for 20 to 25 minutes, or until the crust is dark golden.
