Special Onions Require Special Care

Vidalia onions are known for their one-of-a-kind sweetness—but that same high water content that makes them taste so good also makes them a little more delicate than your average onion. Here’s how to keep them fresh, firm, and fabulous on the shelf.

Handle With Care

Because of their high water content, Vidalias are more prone to bruising and spoilage than dry-storage onions. That means careful handling is critical at every stage—from the farm to your produce section.

  • Cool it Down

    Always store Vidalias in a cool, dry, and well-ventilated area.

  • Stack Gently

    Keep bins shallow and avoid piling onions too deep.

  • Rotate Often

    Practice first-in, first-out inventory.

  • Don’t Store Near Potatoes

    They release moisture and gases that speed up spoilage.

  • Don’t Mist with Water or Refrigerate Uncovered

    They’ll absorb moisture and soften.

  • In the Fridge:

    Wrap each onion in a paper towel to absorb moisture, and store in the crisper drawer with vents closed. They can last up to 3 months this way.

  • In Pantyhose:

    Place onions one-by-one into the leg of clean, sheer hosiery, tying a knot between each one. Hang in a cool, dry pantry and snip off onions as needed.

  • Not with Potatoes:

    Keep them separate! Storing onions near potatoes can make both spoil faster.

Preserving Vidalias for Cooking

Add this checklist in prep areas or receiving docks:

  • Chop & Freeze

    Dice raw onions and freeze in a single layer before sealing in bags.

  • Dry & Store

    Dehydrate onion slices at low heat until dry (not browned), and store in airtight jars.

  • Freeze Whole

    Peel, wash, and core—then freeze for use in soups, sauces, and baked dishes.
