Tomato, Cucumber & Vidalia Onion Salad

Crisp cucumbers, juicy tomatoes and thin-sliced Vidalia onions tossed in a sweet-tangy vinaigrette — this refreshing salad is as simple as it is satisfying. A bright, easy side dish that pairs perfectly with grilled meals or weeknight dinners, and comes together in minutes.

Ingredients for 6-8 Servings

  1. 1 English Cucumber cut into 1/4” slices
    2 lbs Campari Tomatoes, halved
    1 Large Vidalia Sweet Onion peeled, cut in half vertically and sliced thin
    2 TBSP Olive Oil
    2 TBSP  Sugar
    1 cup White Vinegar
    ¼ cup Water
    1 tsp Salt
    ½ tsp Fresh Cracked Pepper
    1 tbsp chopped fresh Parsley

    In a large mixing bowl combine the cucumber, tomatoes and onions. In a quart jar combine all other ingredients. Shake vigorously to combine.  Pour the vinaigrette dressing over the veggies and toss to coat. Cover and refrigerate for 1 hour.
